6 Steps for the Perfect Rotisserie Roast on a 22” Charcoal Kettle
Cooking a roast on a charcoal kettle using a rotisserie is one of the best ways to achieve tender meat, crispy skin and rich smoky flavour. Rotisserie cooking slowly turns the meat over the heat, allowing the juices to baste the roast naturally while the charcoal creates a consistent cooking temperature.
With the right setup and accessories, your kettle BBQ can become a powerful outdoor roasting system capable of producing restaurant-quality results.
In this guide, we’ll show you how to cook the perfect rotisserie roast using a charcoal kettle and a few key accessories.
1. Prepare Your Charcoal
The foundation of a good rotisserie roast is stable heat. Start by lighting your charcoal using a Charcoal Chimney Starter. A chimney starter allows the coals to ignite evenly and quickly.
Once the charcoal is fully lit, carefully pour the hot coals into Charcoal Holders placed on either side of your kettle. This creates indirect heat in the centre of the BBQ, which is perfect for rotisserie cooking.
Indirect heat allows the roast to cook slowly and evenly without burning the outside before the inside is done.
2. Set Up Your Cooking Grate
A flexible cooking setup makes rotisserie cooking much easier. A Wire Grill with Hinged Sections and Removable Insert is ideal for charcoal kettle cooking because it allows you to access your charcoal holders easily during the cook.
The hinged sections let you add extra charcoal or adjust airflow without removing the entire grate. The removable centre insert also allows accessories like a gourmet pan to sit directly in the centre of the kettle beneath the roast.
This setup gives you better control over heat management while the rotisserie is running.
3. Add a Gourmet Pan for Incredible Flavour
Placing a Cast Iron Gourmet Pan beneath your roast can dramatically improve the final result.
Position the pan in the centre of the kettle under the rotisserie meat and fill it with vegetables such as:
- potatoes
- onions
- carrots
- pumpkin
As the roast slowly spins above the pan, the meat juices and fat drip down onto the vegetables, creating incredible flavour and preventing the drippings from burning on the bottom of the kettle.
The result is a full rotisserie meal cooked entirely on your BBQ.
4. Prepare the Rotisserie
Secure your meat onto the Charcoal Kettle Rotisserie and ensure it is tightly fastened so it rotates evenly. Whole chickens, lamb roasts and pork shoulders all work beautifully on a rotisserie setup.
The continuous rotation ensures the meat self-bastes as it cooks, which keeps the roast juicy while developing a crispy outer layer.
Once the rotisserie motor is running, close the lid and allow the kettle to maintain a steady cooking temperature.
5. Control Airflow for Consistent Heat
Maintaining proper airflow is essential for charcoal cooking. The One Touch Cleaning System on your kettle helps regulate airflow while also making ash removal quick and easy.
Opening the bottom vents allows more oxygen to reach the charcoal, increasing heat, while closing them slightly helps stabilise the cooking temperature for longer roasts.
The system also allows you to sweep ash away easily once the cook is finished, keeping your kettle clean and ready for the next BBQ session.
6. Create a Functional BBQ Workspace
Having extra workspace around your kettle makes the entire cooking process easier. Installing a Kettle Table Shelf adds a sturdy side workspace to your BBQ setup.
Adding the Bamboo Bread Board on top of the shelf transforms your kettle into a small outdoor kitchen station. It’s perfect for preparing vegetables, carving meat or resting your roast once it comes off the rotisserie.
This simple addition makes charcoal cooking much more convenient, especially when preparing full meals outdoors.
